Hi, friends! I hope your Easter weekend was gorgeous.
Today, let's return to the Q&A.
Back in January, Kelly (Love Well) asked me:How about your food preferences? Are you SortaCrunchy there as well? Well, let's see. I'll tell you what my food preferences are, and y'all can decide if I'm sorta crunchy in this area. We aren't vegan or even vegetarians. I used to think that all granola-types were, but now I know that's not necessarily true. I cannot imagine life without juicy hamburgers, messy and sticky ribs, or a nice big dish of scrambled eggs. (Speaking of eggs, last week I found two sources for fresh, free-range chicken eggs right here in town. You have no idea how stoked I am about that revelation.) I would say that when it comes to food, we are a mixture of things. Mostly, we try to focus on whole foods. I identify strongly with the slow food movement, and I'm extremely interested in all things Real Food (a la Weston A. Price, Sally Fallon, Nina Planck and others). Almost everything we eat, I cook from scratch. In the past few years, we've slowly phased out convenience foods, prepackaged stuff, and artificial junk. That's not to say you aren't going to find some store-bought granola bars in the pantry, and I fully confess to having a weakness for a late night bowl of (highly processed) cereal each night before bed.
But for the most part, we focus on whole foods. And please know there isn't a note of sanctimony in that either. We are, above all, realists. We drove through McDonald's on the way out of town yesterday. We know what we want to aim for, but we aren't too upset when our ideals give way to whatever works. These days, most everything I prepare comes from one of three sources:

I've never had any of those recipes fail me. How about: what are your favorite things to eat for breakfast, lunch, and dinner? And can I have the recipes, please? I could eat Tex-Mex every single meal of every single day. And never get tire of it. Never. I'm not even kidding. Is this a problem? Given the choice, I will choose Tex-Mex every time. But when it's not a choice, I (somewhat begrudgingly) eat other things. I mean, let's just be honest. I love to eat. I haven't managed to keep all that bountiful baby weight on (that would be 2.5 years for those who are curious) by depriving myself. I'm really not picky. So, here are some favorites: Breakfast Non Tex-Mex: Cheese grits or cottage cheese and fruit Lunch Non Tex-Mex: Anything except salad. (I am not a fan of the salad.) (Does this make me picky?) Dinner Non Tex-Mex: burgers (Kyle style), chips and guacamole (seriously, I cannot help myself), a frosty cold beverage, and good friends to share in the feasting Thoughts? Further questions? Recipes to share? I so look forward to your inspiration.
Tex-Mex choice: Breakfast taco (scrambled eggs, bacon, cheese, shredded potatoes, salsa, whatever you got, throw it in there) Sometimes I dream of the breakfast tacos from the M&M Taco Stand on Hopkins in San Marcos. I wonder if it's still open . . .
Tex-Mex: Cheese quesadillas (I eat these three times a week for lunch. At least.)
Tex-Mex choice: Fajitas or cheese enchiladas or authentic Mexican tacos or chile rellenos or . . .
